Taro (Kalo)

POI PANCAKES

These simple, keiki-approved pancakes are a soft, slightly sweet treat that’s perfect for breakfast or snack time. This recipe is great for using up that last bit of poi, so grab your spatula and let’s get cooking!

INGREDIENTS

  • 1 ½ cups of complete pancake mix

    (“Just add water” mix)

  • ½ cup of poi

  • 1 cup of water

  • ½ tsp vanilla extract

  • 1 Tablespoon of vegetable or canola oil

INSTRUCTIONS

  1. Whisk together poi, water, and vanilla extract until smooth. 

  2. Mix in pancake mix until batter is slightly lumpy. Let it sit for 2 minutes. 

  3. If batter is too thick, whisk in 1 Tablespoon of additional water at a time until you get the right consistency.

  4. Heat a griddle or pan on medium-low. Add oil and spread it to cover the bottom of the pan.

  5. Add batter to the pan by the spoonful, leaving a few inches between pancakes.

  6. When pancakes bubble and edges become firm, flip and cook the other side.

  7. Adjust stove heat if it's too hot. Add oil as needed.

  8. Serve pancakes warm with syrup, peanut butter, fruit, jam, applesauce, or whatever you like!

TIP:

  • Poi pancakes burn more quickly than regular pancakes so watch closely to avoid overcooking. Very browned pancakes will taste bitter.
