Breadfruit (‘Ulu)
‘ULU Curry
This creamy, flavorful dish blends tender breadfruit (‘ulu) with coconut milk, vibrant veggies, and a sprinkle of spices. Ready to give it a try? Grab your ingredients and let’s get cooking!
INGREDIENTS
1 Tbsp. olive oil
1 medium diced onion
2 tsp. salt
2 tsp. curry powder
1 medium zucchini, diced
1 bell pepper, diced
1-14 oz. can coconut milk
1-14 oz. can of diced tomatoes (or 2 cups fresh tomatoes, chopped)
2 Tbsp. tomato paste
12 oz ‘ulu (breadfruit), cooked and cut into chunks
1 can of chickpeas, drained and rinsed
1 small bunch of kale or spinach, chopped (about ½ lb)
Optional Garnishes:
Lime wedges
Cilantro
INSTRUCTIONS
Heat olive oil in a large skillet.
Add onion and salt. Sauté onion over medium heat until translucent.
Add curry powder. Sauté for 30 seconds, stirring constantly.
Add zucchini, bell pepper, coconut milk, ‘ulu, chickpeas, tomatoes, & tomato paste.
Simmer for 5-10 minutes until ‘ulu is heated through and tender.
Stir in the kale or spinach and allow to cook for three minutes or until wilted. Season to taste and serve.
Garnish with lime juice and fresh cilantro for serving (optional).
TIP: For more flavor, add 1/2 Tablespoon of fresh garlic and ginger with the curry powder (or 1/2 teaspoon dried garlic and ginger).
