Breadfruit (‘Ulu)

‘ULU Curry

This creamy, flavorful dish blends tender breadfruit (‘ulu) with coconut milk, vibrant veggies, and a sprinkle of spices. Ready to give it a try? Grab your ingredients and let’s get cooking!

INGREDIENTS

  • 1 Tbsp. olive oil

  • 1 medium diced onion

  • 2 tsp. salt

  • 2 tsp. curry powder

  • 1 medium zucchini, diced

  • 1 bell pepper, diced

  • 1-14 oz. can coconut milk

  • 1-14 oz. can of diced tomatoes (or 2 cups fresh tomatoes, chopped)

  • 2 Tbsp. tomato paste

  • 12 oz ‘ulu (breadfruit), cooked and cut into chunks

  • 1 can of chickpeas, drained and rinsed

  • 1 small bunch of kale or spinach, chopped (about ½ lb)

    Optional Garnishes:

    • Lime wedges

    • Cilantro

INSTRUCTIONS

  • Heat olive oil in a large skillet.

  • Add onion and salt. Sauté onion over medium heat until translucent.

  • Add curry powder. Sauté for 30 seconds, stirring constantly.

  • Add zucchini, bell pepper, coconut milk, ‘ulu, chickpeas, tomatoes, & tomato paste.

  • Simmer for 5-10 minutes until ‘ulu is heated through and tender.

  • Stir in the kale or spinach and allow to cook for three minutes or until wilted. Season to taste and serve.

  • Garnish with lime juice and fresh cilantro for serving (optional).

TIP: For more flavor, add 1/2 Tablespoon of fresh garlic and ginger with the curry powder (or 1/2 teaspoon dried garlic and ginger).
