Breadfruit (‘Ulu)

‘ULU Latkes

These crispy fritters are traditionally made with potatoes, but this breadfruit version offers a local twist that’s delicious with dips! Serve with sour cream, apple sauce, or whatever condiments you enjoy.

INGREDIENTS

  • 1 (2-to 3-pound) mature breadfruit, uncooked, or one 12 oz. bag of frozen breadfruit (thawed enough to grate)

  • 1/2 teaspoon onion powder

  • 1/2 teaspoon garlic salt

  • 2 eggs, lightly beaten

  • 1/2 cup panko or breadcrumbs

  • 1 Tablespoon chives, chopped (plus extra for topping)

  • Oil for pan frying

  • Salt, to taste

    Optional Garnishes:

    • Sour cream

    • Applesauce

INSTRUCTIONS

  • Grate the breadfruit or shred it in a food processor.

  • In a large bowl, toss together grated 'ulu (breadfruit), onion powder, garlic salt, eggs, breadcrumbs, and chives.

  • Heat oil in a skillet over medium or medium high.

  • Drop small scoops of mixture onto hot pan and fry until golden on each side.

  • Sprinkle with salt & chives.

  • Serve with sour cream if desired.
