Kabocha Bites

This simple recipe transforms slices of kabocha into a crispy snack or side with a hint of sweetness. To save time, buy pre-cut kabocha chunks and slice them thinly before cooking.

Servings: 4

INGREDIENTS

  • Half of a 4 lb Kabocha, sliced into ⅛-¼ inch slices 

  • 4 Tablespoons potato starch or cornstarch

  • 2-3 Tablespoons vegetable oil or canola oil

  • 2 teaspoons salt, to taste

INSTRUCTIONS

  • Place the starch and kabocha slices into a plastic bag and shake until the slices are coated in the starch.

  • Heat oil in a frying pan over medium-low heat.

  • Fry slices for ~ 2 minutes on each side until golden brown.

  • Let slices cool slightly on a plate lined with paper towels.

  • Sprinkle with salt and serve warm.
