Pumpkin (Pala‘ai)
Kabocha Bites
This simple recipe transforms slices of kabocha into a crispy snack or side with a hint of sweetness. To save time, buy pre-cut kabocha chunks and slice them thinly before cooking.
Servings: 4
INGREDIENTS
Half of a 4 lb Kabocha, sliced into ⅛-¼ inch slices
4 Tablespoons potato starch or cornstarch
2-3 Tablespoons vegetable oil or canola oil
2 teaspoons salt, to taste
INSTRUCTIONS
Place the starch and kabocha slices into a plastic bag and shake until the slices are coated in the starch.
Heat oil in a frying pan over medium-low heat.
Fry slices for ~ 2 minutes on each side until golden brown.
Let slices cool slightly on a plate lined with paper towels.
Sprinkle with salt and serve warm.
